During finals week, I made a habit of making grilled cheese and fried salami sandwiches: easy, tasty, and highly caloric, a lazy student’s optimal meal. While in the middle of cooking one, I made the unfortunate discovery that we had run out of cheddar. Having already commenced the cooking, I instead attempted something slightly different: grilled feta cheese and salami sandwich.
The end result was rather tasty, but I thought, if I ever had time, I would spruce up the recipe. Here’s what I came up with.
Feta Cheese and Salami Panini
Salami (fried or cold)
Greens (arugula) tossed in balsamic vinegar and olive oil
Olive pesto spread (chopped olives mixed in pesto sauce)
Simple: take all the fixings, fill the sandwich, and press like a panini. The feta won’t melt, but it will soften quite a bit. Also I was thinking of replacing the salami with some other meat, but I can’t think of anything. If anyone feels like trying this out, I’d love to hear the results and any opinions for improvement
